Teaser Tuesdays

Ward Just is the author of fourteen previous novels, including the National book Award finalist Echo House and An Unfinished Season, winner of the Chicago Tribune’s Heartland Award. In a career that began as a war correspondent for Newsweek and the Washington Post, Just has lived and written in half a dozen countries, including Britain, France, and Vietnam. His characters often lead public lives as politicians, civil servants, soldiers, artists, and writers. It is the tension between public duty and private conscience that animates much of his fiction, including Forgetfulness. An Anytime Snack







EASY MINI QUICHES
8 strips bacon
1 onion, chopped
1 cup milk
3/4 cup buttermilk baking mix
3 eggs, beaten
1/4 cup butter, melted
2 cups Cheddar cheese, grated
Preheat oven to 350 degrees.
In a large skillet, fry the bacon and add the onion. Cook until bacon is crisp and onion is soft. Drain fat. Crumble bacon and set aside.
In a blender, combine milk, baking mix, eggs and butter. Mix the onion, bacon, cheese and egg mixture toether and spoon into greased mini muffin cups. Bake for 10 to 15 minutes, or until tops are lightly browned. Allow quiches to cool in the pan before carefully removing.
Makes 24 mini quiches.
I used Super Mini muffin pans and baked almost 48. Also, in my oven, the baking time was about 20-25 minutes. Soooo good!
