Corn Tortilla Quiche

Hubby mentioned that I haven't been cooking breakfast in awhile. Soooo, I did. For the week!




Corn Tortilla Quiche
Ingredients:
3/4 lb. bulk pork sausage
5 (6 inch) corn tortillas
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
1/4 cup canned chopped green chiles
6 eggs, beaten
1/2 cup whipping cream
1/2 cup small curd cottage cheese
1/2 teaspoon chili powder
1/4 cup minced fresh cilantro or parsley (for garnish)
Note: add some salt and pepper to taste for a little more seasoning.
Directions:
In a skillet, cook the sausage until no longer pink; drain. Place four tortillas in a greased 9-inch pie plate, overlapping and extending 1/2 inch beyond rim. Place remaining tortilla in the center. Layer with sausage, Monterey Jack and cheddar cheeses and chiles. Combine eggs, cream, cottage cheese and chili powder (and salt and pepper if desired); slowly pour over chiles. Bake at 350 degrees F for 45 minutes or until the center is set and puffed. Sprinkle with cilantro or parsley. Cut into wedges. ENJOY!


Very tasty

First try failed - cake fell. Discovered that (in my oven), had to bake the cake for one hour and fifteen minutes! AND, the cake is delicious!

Today we seek God's blessing as we gather with thankfulness to dedicate the AT&T Science Facility to the glory of God.

My Rocky..... gone

The Rocky Mountain News, less than two months away from its 150th anniversary, will be closed after a search for a buyer proved unsuccessful. The final edition will print Friday, Feb. 27, 2009.

Gov. Bill Ritter called it "a very, very sad day."
Ritter was speaking to newspaper executives at a luncheon today at the Governor's Mansion when the news came. Someone in the audience stood and said it was official: The Rocky Mountain News was closing.
"We're losing a Colorado icon," Ritter said of the nearly 150-year-old newspaper. "We're losing a newspaper that has helped create history."

The first owner and publisher of the Rocky Mountain News, William Byers, who founded the paper on the second floor of a saloon, decided early on that Eastern moneyed investors would want Denver to have good steamboat access — a profoundly unrealistic prospect on the High Plains. So he simply invented it. Shipping news, complete with the made-up names of arriving and departing vessels, heading out on the South Platte River, bound east with made-up loads of freight, became a fictional staple.

Scholarships for Seguin students

Pictured are Darren Dunn (KWED announcer who emceed the "Smokey" Joe Williams Scholarship Banquet Fundraiser) and Jack Hamlett, former Seguin City Manager. Jack was instrumental in initiating this fundraiser.
An education is so very important and it is gratifying to see that various organizations in Seguin see the importance and give scholarships to deserving students.
Nancy L. Brown, PhD. writes that "when you think about it, after unconditional love and attention, there may be nothing more powerful a parent can give a child than education."
Not only are scholarships available for Seguin students, there are many in the community who mentor students, helping them achieve and instilling a desire for further education.
The "Smokey" Joe Williams scholarship fundraiser will give one or two Seguin students the opportunity to go college.

Last night was the tenth annual "Smokey" Joe Williams Scholarship Fundraiser. Scholarships will be given to deserving Seguin athletes through this fund and the banquet is an important fundraiser toward this purpose. The featured speaker was World Series MVP Dave Stewart.

Granddaughters' tribute to their grandmother


I've always admired Jeff and Beau Bridges as actors. Actually, I didn't see many of their father Lloyd Bridges' movies (nor his television films), but have always read that the Bridges family was a 'real' family. Jeff Bridges' daughters' wrote a very moving tribute about their grandmother Dorothy that Jeff shares on his website.

Isn't this a lovely card my friend made and sent??!!

My sister captures beauty and peace


My sister sent snapshots of this lovely view she has from her front porch. Now, in the spring, when everything is green and vibrant, she can look out and capture tranquility and beauty and the photos will look somewhat different - but still have that peace so evident in these pictures. Oh my . . .


Note: my sister is beautiful and there is an aura of peace that surrounds her - I so love the snapshots and the thought of my sister - the similarities.

The importance of Education










I'm hoping that Chili's Restaurant was busy all day yesterday. Ten percent of the cost of each person's (or group's) meal on February 24th will be donated for scholarships - right here in Seguin. Students who have completed the D.A.R.E. program and who qualify will be eligible for a college scholarship. Hooray for Chili's! Hooray for those who supported this fundraiser (and satisfied their appetites as an added benefit!).
